Hello! This week in the Centennial state, I have worked out 3 times and skied once. I didn't make it to the gym Tuesday due to the OSU game. Matt & I met up in Colorado Springs at BW3 instead. He brought me an OSU jersey to wear, and he wore his Jim Tressel vest. Apparently, the Colorado Springs buckeye fans used to congregate there en masse, but there were still a few scarlet and gray clad fans cheering with us. It was a real nailbiter, but I am very happy we took the SEC down!
Wednesday I was just lazy. However, with Kayte's encouragement, I stopped by the gym on the way back from Pueblo yesterday and did the elliptical. Thanks, Kayte!
Today, Matt & skied at Breckenridge. We just got back from a nice, but chilly, night run. I also have some vegetarian chili cooking in the crock pot. Hopefully it will warm us up! Maybe we can trade healthy recipes on here too???

Hmm...crock pot deliciousness on a cold night. Chili too so lots of protein. Yum! & Smart! Hey are you going vegetarian on us? Is Matt? All of my recipes involve meat. Even my cookie recipes. Okay, not really.
I cooked "Pork Shoulder" in my crock pot the other day...I bought it thinking it was potroast..also something I've never cooked before. I ended up with some really delicious teryaki pulled pork.
The method went like this:
season up some pork shoulder
put into crockpot with 1/2 cup of water
cook on high for 1 hr.
(flip if you want)
cook on low for 6-8 hours
drain all juices
add teryaki sauce
serve with a sweet potato and spinach! VoilĂ
This recipe may not be ideal for pork avoiders. Probably not kosher.
